I came up with this recipe because iknow that a lot of kids who are on the Autism Spectrum also have allergies to soy and eggs, so here's my own version of soy free, no egg mayonnaise. Enjoy.
No egg soy free mayonnaise
1 cup of Mimicreme
1 ½ teaspoons of Yuzu Juice or three teaspoons of lemon or lime juice
2 teaspoons of mustard
1 teaspoon of salt
1 cup of GFCF approved oil (I used grapeseed, but canola works great as well)
Place all the ingredients, except the oil into the blender and start on a low setting.
Slowly, drizzle in the oil a small amount at a time until the mixture begins to thicken
Once the mixture is thick and creamy, shut off the blender, pour into a container and refrigerate.
Chef’s Note: Mimicreme works really well for this because it’s soy free and it adds to the creaminess like an egg mayonnaise. Also you can add chipotle chilis and garlic to this to make a great chipotle aioli. Curry powder to make curry mayo, and the possibilities are endless.
